Greek Salad
3 tomatoes, quartered
1 large red onion, sliced thin
1 medium cucumber, peeled & sliced thin
2 green bell peppers, seeded & cut into rings
2 Pepperoncini peppers, seeded & sliced thin
1 C Kalamata or oil-cured olives
4 TBS extra virgin olive oil
1 tsp. parsley, chopped
Salt to taste
1/3 LB Feta cheese, crumbled or sliced
Wash and dry the tomatoes; core and cut into quarters. Toss tomatoes with the red onions, cucumbers, bell peppers, Pepperoncini peppers and olives. Just before serving, add the olive oil, parsley and salt. Sprinkle crumbled or sliced Feta cheese on top. Serve at room temperature.
