Hoppel-Poppel
5 C milk
4 egg yolks
1-1/4 tsp. vanilla extract
1 C rum
1 pinch salt
2 pinches ground nutmeg
Heat the milk in a saucepan over medium heat; do not boil. In a bowl, beat together the egg yolks and sugar until well mixed and foamy. Add the vanilla, and then pour into the hot milk a bit at a time, beating constantly. Stir the rum into the milk mixture; add salt. Top with the ground nutmeg and serve hot.
