Potatoes > Easy Cheesy Potatoes >
4 to 5 small red potatoes
Salt & black pepper to taste
Butter
1/4 C to 1/2 C cheddar cheese, grated
Peel potatoes. Rinse under cold water; quarter potatoes. Place in a microwave-safe bowl or container. Cook for about five minutes, or until potatoes are tender. Add a pat of butter on top while potatoes are still hot. Season with salt and black pepper to taste. Sprinkle with grated cheddar cheese and cover until cheese melts and binds potato quarters together. Serve.
