1 C button mushrooms, sliced (or use leftover cooked mushrooms)
1 TBS butter
2 tsp. Cornstarch + water (1-2 TBS water, more or less)
Salt & black pepper to taste
In a skillet, sauté mushrooms in butter until soft. With a slotted spoon, move mushrooms to a bowl, leaving cooking liquid in skillet. In a small bowl, combine cornstarch with water; mix until smooth. Pour cornstarch mixture into skillet with mushroom cooking liquid; stir over medium heat until mixture thickens and reaches desired consistency. Season with salt and black pepper to taste. Gently stir in cooked mushrooms. Serve.
