Welsh Omelet
8 oz. flour
2 eggs
4 TBS milk
4 tsp. parsley
1/4 tsp. nutmeg
1/4 tsp. salt
Oil for frying
In a bowl, add the flour. Mix in nutmeg, salt and beaten eggs yolks. Stir in the milk, beating constantly until mixture is smooth. In a separate bowl, whisk egg whites until stiff; add the parsley. Fold the egg white mix into the batter, mixing well. Pour entire mixture into greased skillet and cook to desired doneness.
