3 LBS chicken (breast and other pieces)
2 strips bacon, chopped
1 onion, finely chopped
1 TBS olive oil
2 oz. butter
1 clove garlic, minced
2 TBS flour
1/2 C white wine
3/4 C water
1 can (10-3/4 oz.) cream of mushroom soup
1/2 C mushrooms, cleaned & sliced
2 TBS fresh parsley, chopped
Cut the chicken into bite-sized pieces; brown in a frying pan with the butter and olive oil. Remove the chicken; add onion and bacon into the pan. Brown until onion is translucent, and then stir in the flour. Add the water, wine and soup. Stir until the ingredients are smooth and mixed well. Then stir in minced garlic. Pour entire mixture into a greased loaf pan or glass casserole dish. Bake at 200-degrees F for about one hour, adding mushrooms and parsley after the dish is in the oven for forty minutes.
