1 whole chicken (minus giblets)
1/2 C vegetable oil
1/2 C heather honey (or plain honey)*
Salt & black pepper to taste
1/4 C prepared mustard
1/2 tsp. curry powder
1 garlic clove, chopped
Place whole chicken in a large casserole baking dish. In a bowl, mix together vegetable oil, honey, salt and black pepper to taste, mustard, curry powder and chopped garlic. Pour mixture over chicken. Cover and cook in a 375-degree F oven for about one hour, basting frequently. Uncover and bake for another thirty minutes to brown chicken.
Suggestion: Serve with boiled or mashed potatoes and fresh green vegetables (broccoli or green beans).
*Note: Heather Honey comes from the nectar of heather plants indigenous to Scotland, which produces bell-shaped purple flowers. Heather Honey can be purchased online via specialty stores (such as Heather Hills Farm in Perthshire), or plain honey can be substituted for use with Chicken in the Heather.
