3/4 C butter, cut into small pieces
1 C all-purpose flour
1-1/2 C sharp cheddar cheese, grated
1 egg yolk
Sesame seeds (for sprinkling)
Lightly grease a cookie sheet with butter. In a large bowl, mix flour and cheese together; add the remaining butter and blend with fingertips. Stir in egg yolk and mix to form dough; wrap dough in plastic wrap and chill in the refrigerator for thirty minutes. On a lightly floured surface, thinly roll out cheese dough; cut out shapes into 2-1/2" circles. Place the circles on the cookie sheet and sprinkle with sesame seeds. Bake at 400-degrees F for about twenty minutes, or until the cookies are lightly golden. Transfer the cookies to a wire rack and allow to cool before serving. Repeat steps with remaining dough.
