4 large potatoes, peeled & cubed
1 can (16.5 oz.) baked beans
1 can (12 oz.) corned beef, broken into pieces
Dash of Worcestershire sauce
1/2 C cheddar cheese, grated
Butter (for mashed potatoes)
Milk (for mashed potatoes)
Black pepper to taste (for mashed potatoes)
Preheat oven to 400-degrees F. In a cooking pot, boil cubed potatoes in water until tender; drain. Place potatoes in a bowl and mash with desired amounts of butter, milk and black pepper. Pour baked beans into a greased casserole dish; place corned beef pieces on top and sprinkle with Worcestershire sauce. Top with mashed potatoes. Bake uncovered for abut twenty-five minutes; potatoes should begin to crisp but not brown. Sprinkle on grated cheddar cheese; bake for an additional fifteen to twenty minutes or until cheese has melted and browned.
Suggestion: Serve with fried eggs, sliced tomatoes or with a side dish of vegetables.
