2-1/2 C self-rising flour
1 cube butter
1 C castor sugar
1-1/4 C milk
1 egg
1-1/2 C dried "bush" tomatoes*
1/2 C roasted & ground wattleseed*
1 TBS ground lemon myrtle*
Sift the flour into a large bowl; rub in the butter. Stir in the sugar, milk and eggs. Do not over-mix. Add the "bush" tomatoes, wattleseed and lemon myrtle (leaving a bit of each aside to sprinkle on top). Spoon mixture into a greased muffin tray. Place two "bush" tomatoes on top of each muffin, and sprinkle with extra wattleseed and lemon myrtle. Bake in a 200-degree F oven for about twenty minutes.
*Note: Substitute "bush" tomatoes with common dried tomatoes, wattleseed with ground hazelnuts and ground lemon myrtle with lemon zest.
