Boiled Cake
1-1/2 C mixed dried fruit
1 C butter or margarine
1/4 C light brown sugar
1/2 C soft brown sugar
1 C milk
2 C flour
2 tsp. mixed spice (allspice, cinnamon, cloves, ginger & nutmeg)
1 tsp. baking soda
Pinch of salt
2 eggs
Preheat oven to 350-degrees F. In a large cooking pot, combine the fruit, sugars, butter and milk. Bring to a boil and then reduce heat; cook for about ten minutes. Remove from heat and allow mixture to cool. Add flour, mixed spice, baking soda, salt and eggs. Mix well. Pour into an 8-inch greased cake pan and bake for one hour to ninety minutes. Cake is done when toothpick inserted comes out dry and clean. Allow cake to rest for five to ten minutes before removing from cake pan and cooling on a wire rack.
