8 large cooking apples, pared & cored
1 C soft breadcrumbs
1/2 C seeded raisins, finely chopped
1/4 C packed brown sugar
2 TBS Scotch whiskey
1/4 C light corn syrup
1/4 C dark corn syrup
1/2 C Scotch whisky (for finish)
Arrange apples in two rows in a large baking dish. Mix breadcrumbs, raisins, brown sugar and 2 tablespoons of Scotch whiskey to moisten. Spoon mixture into apple centers. In a small bowl, mix corn syrups and then pour over the stuffed apples. Bake at 325-degrees F for thirty to forty minutes, or until apples are tender, basting frequently. Pour syrup from the baking dish into a bowl. Just before serving, warm 1/2 C of Scotch whiskey and pour over the apples; carefully ignite. Serve with the sauce.
