Carrot Cake in the Oven

Wilbert claims the following is the best carrot cake recipe in existence:

 

Carrot Cake

1 C vegetable oil

4 eggs

1 C sugar

2 C grated carrots

1 C chopped walnuts (optional)

 

In a large bowl, mix the above ingredients. In another bowl, combine:

 

2 C flour

2 tsp. baking soda

1/4 tsp. salt

3 tsp. baking powder

1 tsp. cinnamon

 

Blend both mixtures together. Pour into a greased baking dish or loaf pan; bake for one hour at 350-degrees F. Note: Icing is optional. For a quick icing, combine one container of Cool Whip and one packet of sugar-free vanilla-flavored dry pudding mix.

The cake is moist, and the icing is not overly sweet. A slice is wonderful with a hot cup of tea or coffee.
