Specialty Foods

Yesterday Wilbert and I did our grocery shopping, when we bought two frozen packages of Nancy's Specialty Foods. They were on sale two for $6, so I couldn't pass them up. One was ready-made Pecan Tartlets, and the other was Mushroom Turnovers. Nancy also has an array of other foodstuffs: quiches, desserts and gourmet appetizers.

 

According to her web site, the following is Nancy's mission statement:

The web site also contains a party guide and tips, recipes, a game section, product locater and more. So far, Wilbert and I have tried the Pecan Tartlets. They are divine. We've been eating them cold, and they are still delicious. If the Mushroom Turnovers are as good as the tartlets, I plan on trying more of the specialty items for sale. They seem to be made with quality and good taste, at a fair price to boot.

 

For those die-hards who would rather make their own tartlets from scratch, I've provided a recipe below:

 

Pecan Tartlets

 

Shell:

1/2 C butter

1/2 C sugar

1 egg

1 tsp. almond extract

1-3/4 C flour

 

Mix the butter and sugar together in a bowl; add the egg and almond extract. Mix in flour. Divide the dough into twenty-four equal pieces. Press each piece into the bottom and up the sides of a mini-muffin pan. Bake at 350-degrees F for ten minutes or until lightly brown.

 

Filling:

1 C confectioners' sugar

1/3 C corn syrup

1/2 C butter

1 C chopped pecans (plus extra to top)

 

Mix the ingredients in a medium saucepan; bring to a boil and cook for one minute. Fill the mini-muffin shells, and top each with chopped pecans. Bake in a 350-degree F oven for five minutes. Cool in the pan for about one minute; then remove tarts from the pan and cool on a rack. Yield: Twenty-four mini-muffin-sized pecan tartlets.

Utter yum!
