Reminiscing with Potatoes

Wilbert subscribes to Reminisce Magazine. I was browsing through some of the older issues tonight, and found a delightful potato recipe to share.

 

Broiled Red Potatoes

2 unpeeled medium red potatoes

1 TBS butter or margarine

1 tsp. Worcestershire sauce

1/2 tsp. salt (optional)

1/8 tsp. black pepper

 

Cut the potatoes into 1/4" slices; place in a microwave-safe bowl. Combine the remaining ingredients and pour over potatoes. Cover and cook on high for one to two minutes, or until butter melts. Place potatoes in a single layer on a greased baking sheet. Broil for five to six minutes on each side, or until browned. Diabetic exchanges: One serving (prepared with margarine and without salt), equals 1-1/2 starch, 1 fat, 151 calories, 83 mg sodium, 0 cholesterol, 23 gm carbohydrate, 2 gm protein and 6 gm fat.

Utter yum!
