Eggy Bread

Wilbert is such a lover of food, yet he has never heard of much less eaten Egg-in-the-Hole. The dish is not to my liking because I lack a fondness for eggs, but my parents have been making it for years. Wilbert was raised with eggs, tortillas and peppers, so perhaps it shouldn't be a surprise he hasn't heard of many recipes I consider commonly known.

 

Egg-in-the-Hole

4 slices bread

4 eggs

Butter

Salt & black pepper to taste

 

Butter one side of each piece of bread; cut a small circle in the middle of each slice. Place in a heated frying pan, buttered-side down, and butter the other side. Crack open an egg; place in the hole in the bread. Season with salt and black pepper to taste. After the first side of bread is browned, flip over gently to cook the other side. Cook eggs to desired preference (dippy or hard). Remove from skillet and serve.

I'm sure there are many who have their own versions of the dish, but the above recipe is how my parents like it. In order to get the hole in the middle of each bread slice, I use the rim of a small juice glass, pressing into the bread to create the hole. I cook the rounds in the same pan with the bread, so there's an extra tidbit.

Wilbert liked the breakfast. He had four eggs on four slices of bread, although on the last two he added honey. Leave it to him to find something sweet to accompany the simple yet satisfying meal.
