Cheesy Bat BiscuitsOver the next while, I'm going to post Halloween-themed recipes every week. The gruesome holiday is looming closer, and I'd like to get the ghoulish spirits started.

 

And what a better way to begin than with some savory treats:

 

Cheesy Bat Biscuits

1 can (16 oz.) refrigerated buttermilk biscuits (jumbo size)

3 TBS butter, melted & divided

1/4 C grated Parmesan cheese (or packaged)

1 tsp. dried parsley flakes

1 tsp. dried basil leaves

 

Preheat oven to 350-degrees F. Flatten each biscuit into shape just large enough to fit a 3" bat cookie cutter. Cut out the bat shape and discard scraps. Place the biscuits on a baking sheet. Lightly score the biscuits to outline the bat wings; poke holes for eyes with a toothpick. Brush the biscuits with one tablespoon of butter, and bake for seven minutes. Meanwhile, in a small bowl combine the cheese, the remaining two tablespoons of butter, parsley and basil. Turn the biscuits on end and split into halves with forks. Spread one teaspoon of cheese mixture on the bottom half of each biscuit; replace biscuit top. Bake three minutes or until biscuits are golden. (Makes eight servings).
