I have to admit I wasn't thrilled with Paula Deen the first time I saw her in action on The Food Network. No offense intended, but the Southern drawl becomes less than charming after so many repeats of "ya'll." Then I saw her on Larry King Live a few months ago, and was impressed with the woman as a person. She went through quite a bit to get to where she is today, and I can't help but admire that. (Please Note: This blog entry was posted six years before the racist debacle surrounding Deen in 2013).

 

That being said, Sunday dinner was a rendition of Paula Deen's Old-Fashioned Meat Loaf. As usual, I made adjustments to suit my own tastes. Changes are noted below.

 

Old-Fashioned Meat Loaf

aka "Basic" Meatloaf Recipe by Paula Deen

 

1 LB ground beef

1-1/4 tsp. salt

1/4 tsp. ground black pepper

1/2 C chopped onion

1/2 C chopped bell pepper (I used celery instead)

1 egg, lightly beaten

8 oz. canned diced tomatoes with juice (omitted)

1/2 C quick-cooking oats (I used plain breadcrumbs)

Lawry's Seasoning Salt (my addition)

Approx. 1/4 C milk (my addition for moisture)

 

Topping

1/3 C ketchup

2 TBS brown sugar

1 TBS prepared mustard

 

Preheat oven to 375-degrees F. Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf. (Instead of shaping the meat into a loaf pan, I molded it with my hands and laid it out on a broiler pan lined with foil for baking instead). I think Paula Deen cooked meat loaf without using a loaf pan in a different episode of her show. Topping: Mix ingredients for topping and spread on loaf. Bake for one hour.
