Peanut Butter Bread

The following recipe came from the now-defunct Food & Recipe Message Board, which I decided to bake today:

 

Peanut Butter Bread

2 C flour

1/3 C sugar

2 tsp. baking powder

1/4 tsp. salt

3/4 C peanut butter (creamy or chunky)

1 C milk

1 egg, well-beaten

 

Preheat oven to 350-degrees F. Grease an 8-by-4-inch loaf pan and one mini-muffin pan. Place the flour, sugar, baking powder and salt in a large bowl. Add the peanut butter, milk and egg and mix until well-blended. Spoon into the loaf and mini-muffin pans and bake for about fifty minutes; remove pans from oven and cool on a rack. Recipe makes enough for one loaf and six mini-muffins.

The bread and muffins are easy to make, and turn beautifully: moist and light tan in color. The muffins are great for a mid-day snack.
