Irish Ice Cream

What a strange yet intriguing recipe this appears to be:

 

Guinness Ice Cream

1 C water

2 TBS cornstarch

1/2 C sweetened condensed milk

1-1/2 C evaporated milk

1/4 tsp. salt

1/2 C sugar

1/2 C Guinness stout

 

In a heavy saucepan, whisk together the water and cornstarch. Simmer the mixture over moderate heat, whisking, for about two minutes. Add the milks, salt and sugar. Heat the mixture over moderately low heat, whisking, for one to two minutes, or until sugar is dissolved. Remove saucepan from the heat. Let the mixture cool completely, and then stir in the Guinness. Freeze mixture in an ice-cream freezer according to the manufacturer's instructions. Makes about one quart of ice cream.
