Chili Potato Casserole

Several years ago my father found a recipe called Chili-Potato Casserole. It's one of the simplest recipes I've ever prepared.

 

The end result blends a combination of truly marvelous but common flavors. I recently prepared the dish again. It was a first for Wilbert, and he seemed to enjoy the meal. For a side, I served leftover Green Beans with Zucchini. Naturally, Wilbert reached for bread as well.

 

The recipe goes as follows:

 

Chili-Potato Casserole

1 LB small red potatoes (or 1 can "New" potatoes)

1 can chili

1/2 C shredded cheddar cheese

 

Microwave the potatoes until cooked. Cut each potato into quarters. Layer the pieces on the bottom of a glass baking dish; spread can of chili over the top. Place shredded cheese on top of the chili; microwave for three minutes (or until cheese is melted and heated through). Serve.

My father is always alert to new and interesting recipes, and he often passes them along to me. Thanks, Dad.
