Breakfast Burritos for Lunch

We had a yummy lunch of breakfast burritos today. I've been craving them for awhile, and rather than shell out money for the only decent fast-food version at McDonald's, I decided to make my own.

 

By the way, the only item even remotely worth the price at McDonald's these days are the breakfast burritos. Their over-blown chintzy salads are a joke, and I don't much care for burgers and fries. The fish and chicken sandwiches are tasty, though.

 

Anyway, I prepared my burritos as follows:

 

Luncheon Breakfast Burritos

1-1/2 LBS fresh pork sausage

1/2 LB fresh white mushrooms (small), cleaned & sliced)

2 TBS each red & yellow bell pepper, seeded & chopped

3 TBS minced sweet onion

3 potatoes, peeled, cleaned & cubed small

8 large eggs

Liquid Coffee Mate

Salt & black pepper to taste

Butter (optional)

Flour tortillas, small size (roughly 9" diameter)

Cheese (optional)

 

In a skillet, cook the sausage until no longer pink. Drain; break up into small pieces in a large bowl. Cook the cubed potatoes in a small pat of butter in the same skillet; add onions and bell peppers half-way through cooking time. Add mushrooms and cook until softened. Add mixture to sausage in bowl. Whisk eggs with a tablespoon of liquid Coffee Mate; cook with a small pat of butter in skillet. Add scrambled eggs to sausage-potato mixture. Heat tortillas in microwave or stove burner on medium heat for about thirty seconds each side. Spoon cooked mixture down the center of the tortilla, and top with cheese if desired. Fold tortilla over like a burrito and heat in microwave until cheese melts, about fifteen seconds. Serve at once.

The burritos were superb. I used fresh pork sausage from a local butcher, and the mushrooms were also fresh. I mixed liquid Coffee Mate with the eggs rather than milk because it gives a creamier taste.

 

I ate one burrito, while Wilbert polished off four in one sitting. This is the reason I used so many eggs, but for one normal person the recipe could be cut in half.
