Southern Succotash

An interesting dish from Kellogg's Kitchen:

 

Southern Style Succotash

2 TBS margarine or butter

1-1/2 tsp. Worcestershire sauce

1 tsp. lemon juice

1/4 tsp. red pepper

3 C Kellogg's Corn Flakes cereal

 

Succotash:

1/2 C chopped onions

1/3 C chopped green bell pepper

1 clove garlic, chopped

1 can (28 oz.) stewed tomatoes, drained

1 can (8 oz.) tomato sauce

2 TBS dried parsley flakes

1/4 tsp. red pepper

1 pkg. (1 LB) frozen, cut okra, thawed

1 pkg. (10 oz.) frozen whole kernel corn, thawed

 

In 12-inch fry pan, heat margarine, Worcestershire sauce, lemon juice and red pepper over low heat. Add corn flakes, stirring gently until cereal becomes lightly browned and crisp. Set aside for topping. Coat 12-inch fry pan with cooking spray. Sauté onions, green pepper and garlic. Add remaining ingredients. Cook, stirring occasionally, until okra is tender. Sprinkle with topping. Serve hot. Yield: ten servings.
