Garlic Fries

Who says French Fries are the picture of un-health? Or is it now Freedom Fries? Whatever the case, Saturday I received a mailing from Cooking Light Magazine which included a few "free" recipes.

 

Being half Irish, I'm partial to potatoes. I'm always looking for different ways to prepare spuds. "Garlic Fries" might sound a bit excessive, but the recipe is easy and the taste is divine:

 

Garlic Fries

1-1/2 LBS potatoes, peeled & cut into 1/4" strips

2 tsp. vegetable oil

1/4 tsp. salt

Nonstick cooking spray

1 TBS butter

4 garlic cloves, minced (about 2-1/2 teaspoons)

1 TBS finely chopped fresh parsley

1 TBS Parmesan cheese, grated

 

Preheat oven to 400-degrees F. Combine the first three ingredients in a large zip-top plastic bag; toss to coat. Arrange the cut potato strips in a single layer on a baking sheet coated with nonstick cooking spray. Bake for fifty minutes, or until potatoes are tender and golden brown, turning after twenty minutes. Place the butter and garlic in a large nonstick skillet; cook over low heat for two minutes, stirring constantly. Add the potatoes, parsley and cheese to pan; toss to coat. Serve at once. Yield: Three servings.
