Sunday Fiesta

Sunday afternoon, true to his word, my husband Wilbert barbequed chicken and at the last minute grilled some hot dogs as well. He is thoroughly enjoying the new Hibachi grill. I can see our summer filled with food cooked in the outdoors. I'm not complaining one whit. Like most people, we despise clean-up. Barbequing most of our meals is a pleasant solution to the dilemma.
I love burned and crispy hot dogs; so does Wilbert. He cooked a half-dozen of them, and then took one package each of chicken drumsticks and thighs and seasoned them on one side with fresh cilantro, crushed garlic, olive oil, salt and black pepper, and nutmeg. We only have a small Hibachi, so Wilbert cooked the chicken in batches. Our plan was to eat the meat for dinner, but we ended up having a late lunch instead. Accompanying the meal was a garbanzo bean salad (which also included cut yellow wax beans and green beans, drizzled with olive oil and vinegar).
After the meal we walked our pooch Foofer in the yard and took note of the progress of our vegetable garden. The plants growing the most are corn stalks; it seems as if they sprouted an inch overnight. The carrots, lettuce and broccoli are coming along nicely as well. I can't wait to pluck little gems from our garden and prepare them with a meal.
*POSTSCRIPT (Wednesday 06/18/03): The Perfect Snack! Leftover barbequed chicken, heated slightly in the microwave, and wrapped in a warm flour tortilla. Ambrosia!
