Saturday Veg-Out

I was dying for some fresh vegetables today. My favorite is always broccoli, but I threw in some zucchini and a can of Kroger brand kernel corn with red and green peppers as well. I mixed all of the above with angel hair pasta cooked al dente, and seasoned it with olive oil, parmesan cheese, salt, black pepper, parsley, and a dash of Lawry's Seasoned Salt.

 

I made so much it will definitely last me for days. The pasta mix also tastes good cold. It's the kind of food I prefer, as opposed to fast food "junk" or greasy meats such as beef or lamb. If I had my druthers, I could probably live on vegetables, rice, pasta, fish and chicken. I don't think I'd miss the rest.

 

Another part of today's meal consisted of baked Pollock, simply seasoned with salt, black pepper and lemon juice.
