Summer Yummies

Orange Chicken and Wild Rice Salad. Sounds heavenly, doesn't it? It's all prepared in one whack and served cold, perfect for the damned summer inferno about to descend on us.
I found the following recipe at Busy Cooks. It's as easy as one-two-three:
Orange Chicken & Wild Rice Salad
3 C cooked wild rice
2 C cubed cooked chicken
1 C fresh pea pods
1 can (11 oz.) mandarin orange segments, drained
1/2 C honey Dijon salad dressing
Combine all ingredients in a bowl; mix well. Cover and chill until ready to serve. Recipe makes about four equal portions.
