Good God Garlic!

In today's Food Network newsletter there was a recipe for "40 Cloves and A Chicken." I thought surely not. But indeed, the recipe calls for forty cloves of garlic for one whole broiler/fryer chicken. The dish is from Alton Brown, a chef on the Food Network.

 

40 Cloves & A Chicken

1 whole chicken (broiler/fryer) cut into 8 pieces

1/2 C plus 2 TBS olive oil

10 sprigs fresh thyme

40 peeled cloves garlic

Salt & black pepper

 

Preheat oven to 350-degrees F. Season chicken with salt and black pepper. Toss with two tablespoons olive oil and brown on both sides in a wide fry pan or skillet over high heat. Remove from heat, add oil, thyme, and garlic cloves. Cover and bake for ninety minutes. Remove chicken from the oven; let rest for five to ten minutes. Carve and serve.

The dish sounds easy to make, but be sure to pack a lot of breath mints.
