Summer Grub

Although I'm not a huge fan of the summer season because of the dastardly heat, I do enjoy the foods that mark this time of year.

 

McCormick Kitchens has a great collection of grilling recipes, as does Kikkoman.

 

However, one of my favorite "grilling" recipes has to be my husband's version of paprika chicken.

 

Grilled Paprika Chicken

3 to 4 each of chicken drumsticks & thighs

Paprika

Lawry's Seasoned Salt

Black pepper

Cinnamon

 

Rinse chicken in cold water; shake off excess moisture and place chicken on a large cookie sheet. Season chicken with generous portions of paprika, Lawry's Seasoned Salt and black pepper. Make sure to rub spices underneath the skin as well. Sprinkle lightly with dried cinnamon. Allow the chicken to marinate for thirty minutes to one hour. Place the chicken on a pre-heated outdoor grill, turning once, until fully cooked and no longer pink inside. Variation: Broil chicken in oven, although this method is not as good as the outdoor grill. Suggestion: Grill and serve with Grilled Potatoes Labrecque.

Yummy stuff - and it's on my agenda for Memorial Day weekend.
