Campbell's to the Rescue
Posted Wed, 05/21/03
Another great recipe from Campbell's Kitchen! I get their newsletters daily now. Most of the recipes are easy to prepare and taste divine. Once in awhile I like to make something complicated, but on a busy night it's a relief to find something quick and tasty as well.
Honey Mustard Chicken Bites
1-1/2 LBS boneless chicken breasts, cut into 1" pieces
1 jar (12 oz.) refrigerated honey mustard salad dressing
2 C Pepperidge Farm Herb Seasoned Stuffing, crushed
2 TBS orange juice
Dip chicken into 3/4 cup dressing. Coat with stuffing. Place chicken on baking sheet. Bake at 400-degrees F for fifteen minutes or until chicken is done. Mix remaining dressing and orange juice in saucepan. Heat through. Serve with chicken for dipping. Makes about forty appetizers. Tip: To microwave dip, mix remaining dressing and orange juice in microwave-safe bowl. Microwave on HIGH for one minute or until hot.
I'm allergic to honey, so I hunted around the internet for a mustard sauce without it. I found a sauce substitute at Cathleen's Kitchen, whose web site is no longer online:
Easy Orange-Mustard Sauce
1 C V8 Vegetable juice
1/2 C orange marmalade
1 TBS Dijon-style mustard
In a saucepan, combine V8 juice, marmalade and mustard. Heat mixture to boiling over medium-high heat. Reduce heat to low; cook for ten minutes or until sauce thickens, stirring often.
Good eats!
