Egg Tips

This afternoon a reader sent me a note, asking for additional egg tips:
Do you have any tips on boiling fresh eggs? It is hard to peel them without them looking like they have been soaked in acid or something.
There is one specific tip at Food Fare about peeling hard-boiled eggs:
To easily peel hard-boiled eggs, let them sit in the pan with the lid on after boiling them for about five minutes. The steam will build up under the shells, and they will come off easier during peeling.
I also found more advice at the Tip King (web site now defunct):

Always use the freshest eggs possible; they will peel much easier.

Poke each egg with a needle before boiling; this allows water to surround the egg making the peeling easier.
Another tip while boiling eggs is to wrap each egg individually in aluminum foil before putting into the water; the shells will not crack. I've tried this and it really works.
