The gist of the piece points toward food writers generally disregarding skyrocketing food prices when describing how to prepare or find ingredients for "exotic" dishes. In essence, the "average Joe" cannot afford $120 a pound for jamón ibérico.
The same often applies to television cooking. As much as I enjoy watching Hell's Kitchen every week, I am sometimes appalled by the waste of food when a dinner service goes wrong.
