Swiss Vegetable Bake

Here is another scrumptious recipe from Campbell's Kitchen. I love vegetables, so this is right up my alley:

 

Swiss Vegetable Bake

1 can (26 oz.) Campbell's Cream of Chicken soup

2/3 C sour cream

1/2 tsp. black pepper

2 bags (16 oz. each) frozen vegetable combinations (broccoli, cauliflower, carrots)

2 C shredded Swiss cheese

2-2/3 C French's French Fried Onions

 

In a bowl, mix together the soup, sour cream and black pepper. Stir in the vegetables, 1-1/2 cups of the cheese and half the onions. Spoon mixture into a 3-quart shallow baking dish. Cover. Bake at 350-segrees F for forty minutes or until vegetables are tender. Stir. Sprinkle the remaining cheese and onions on top. Bake five more minutes. Serve.

If I had my way we'd be eating a lot of vegetables with every meal, but getting Wilbert to do so is akin to pulling teeth.
