Chilaquiles Verde

The following recipe might not be overly healthy, but it sounds damned good:

 

Chilaquiles Verde Bake

Chicken, broccoli and tortilla strips are laced with a creamy sauce and topped with cheese for this version of a classic Mexican dish. Created to use with day-old tortillas.

 

1 can (10-3/4 oz.) Campbell's Creamy Chicken Verde Soup

1/2 C cup sour cream

1/4 C water

2 C cubed cooked chicken

2 C frozen broccoli flowerets

4 corn tortillas (6"), cut into strips

1/2 C shredded cheddar cheese

 

Mix soup, sour cream, water, chicken, broccoli and tortillas. Spread in a two-quart shallow baking dish. Top with cheese. Cover; bake at 350-degrees F for twenty-five minutes or until hot. Serves four.

The recipe is from Campbell's Kitchen, naturally. Wilbert's mother used to make a similar dish, but she never added sour cream or broccoli.
