Hungry Thursday

Aside from a Shepherd's Pie I made last week, hot meals have been scarce in my house again. I've been busy with other things, or simply not in the mood to cook.
However, this morning I went to Safeway to pick-up a few items. I was suddenly very hungry, so I grabbed a Jennie-O turkey ham, a box of boil-in-the-bag brown rice, fresh mushrooms, and a bag of frozen broccoli spears. The store also had corned beef on sale, so I nabbed a brisket.
I returned home around ten-thirty. I cut six slices of the turkey ham, cooked them in the skillet just until they had slight burn marks, and then steamed the broccoli spears in a large Tupperware bowl with a dash of butter. I prepared the brown rice, but also added sautéed fresh mushrooms and onions, minced. The cooking aromas woke Wilbert and he came stumbling into the kitchen, a happy grin on his face. We were finished with lunch before eleven-thirty - unheard of for me.
Tomorrow I'm going to cook corned beef brisket in the crock pot all day. No fancy side dishes as with St. Patrick's Day, though. This time the meat is strictly for sandwiches - with a few treats for the dogs, of course.
