A nice variation of chicken enchiladas:

I got the idea for the dish when I had two leftover hot Italian sausage links (uncooked) from a pack of five. I made the Chicken Enchiladas like I normally do, but also added cooked and crumbled sausage on top, along with the cheese and black olives. It was quite scrumptious.
