Flavorful Simplicity

As St. Patrick's Day draws closer, I plan to share Irish recipes from my books and articles related to Ireland.
If you're in the mood for a hearty breakfast, take a stab at the following:
Irish Omelet
4 large eggs
4 to 6 potatoes, mashed
Juice of 1 lemon
3 TBS chopped chives or green onions
Salt & black pepper to taste
2 TBS butter
Cook potatoes in a pot of boiling water or in microwave until tender. Allow to cool before peeling. In a bowl, mash potatoes. Separate the eggs to beat yolks; add to the mashed potatoes and mix well. Then add lemon juice, green onions, salt and black pepper. Melt the butter in an omelet pan (or a large frying pan). Whisk the egg whites until stiff; stir into the potato/egg mixture. Pour into heated pan on top of the butter; cook until a golden brown on both sides. Place under a broiler for a few minutes to puff up the omelet. Serve.
