The last few days have been extremely busy. I've been getting the new design for my official web site ready for update tomorrow, so I haven't had the time to cook a decent meal. However, there has been an interesting "quickie" dinner and a flavorsome leftover.
Tuesday, 01/27/04: I combined a can of chili with cubes of
Velveeta cheese and minced onion, then micro-waved the entire
conglomeration. Next came boiled turkey hot dogs and toasted buns,
on top of which I spooned the chili mixture. For homemade "fast
food," the meal wasn't half-bad and of course delighted my junk-food
junkie husband.
Wednesday, 01/28/04: I took leftover tomato sauce and angel
hair pasta, and then combined it with fresh sliced and sautéed
zucchini. The vegetables were seasoned with black pepper and garlic,
and cooked in olive oil. The leftover sauce also contained button
mushrooms, sliced black olives and Italian sausage. I tossed the
whole lot together and served it with crusty French bread toasted
with butter, garlic and parsley. Spinach salad completed the meal.
Not bad for cooking on the fly, and not one complaint came forth from my perpetually hungry husband.
