Mr. Food Markets

I received a small booklet advertising recipes from Mr. Food yesterday. At first I thought it was a free cookbook (albeit a small one), and that it was wonderfully nice of Mr. Food to offer. However, I should have known better.

 

The booklet is nothing more than a marketing ploy to get people to buy one or several of the chef's cookbooks, although two recipes were included in the "flyer."

 

The following seemed the most appetizing:

 

Chicken Burrito Bundles

2 C cooked, chopped chicken (leftover if desired)

1 pkg. (1-1/4 oz.) taco seasoning mix

1 can (16 oz.) refried beans

6 four tortillas, 8"

1 pkg. (8 oz.) shredded sharp cheddar cheese

3 plum tomatoes, diced

1 small onion, diced

Salsa

 

Preheat oven to 350-degrees F. Place the chicken and seasoning mix in a large zip-top plastic bag (heavy-duty); seal and shake to coat. Spread the refried beans down the center of each tortilla; top with the chicken, cheese, tomatoes and onion; roll-up. Wrap each tortilla in aluminum foil and bake for fifteen minutes. Serve with salsa if desired.

The dish sounds so-so.
