Lunch Cravings

I had a persistent craving for a healthy lunch today. This is what I came up with:
(Above): Salmon filets, scalloped potatoes, cabbage & Brussels sprouts.

The meal included two small salmon filets baked in foil, scalloped potatoes and cabbage strips steamed with Brussels sprouts. It was yummy, leaving enough leftover for another serving.
It was definitely much better than my typical fast-food get during the week (such as the quick-but-tasty Del Taco or chicken rings from Arctic Circle).
