Bisquick Nibbles

Our New Years Eve dinner consisted of baked chicken and dumplings made using Bisquick baking mix. As the food cooked, I looked over the Bisquick box and found an interesting recipe for dinner. I made the following two days ago:

 

Deluxe Cheeseburger Melt

1-1/3 C Original Bisquick mix

1/4 C water

2 eggs

1-1/2 C shredded cheddar cheese (6 ounces)

1 LB ground beef

1 can (10-3/4 ounces) condensed cream of mushroom soup

1 C frozen mixed vegetables

 

Heat oven to 400-degrees F. Spray 13x9-inch pan with cooking spray. Stir Bisquick mix, water, eggs and one cup of the cheese in medium bowl; spread in pan. Cook beef in 10-inch skillet over medium-high heat for five to seven minutes, stirring occasionally, until brown; drain. Stir in soup and vegetables; heat until hot. Spread over batter in pan. Bake twenty-three to twenty-five minutes or until edges are light golden brown. Sprinkle with remaining 1/2 cup cheese. Bake one to three minutes longer or until cheese is melted.

The dish is simple, yet quite delicious. I usually prefer lighter fare, but the "cheeseburger melt" was just dandy. It also reminded me of the tad expensive Betty Crocker Complete Meals, which are tasty but hardly worth the price tag. Now we can do it "homemade."
