Lebanese Green Bean Stew
1 LB French-style green beans
1 LB beef, cubed (chuck steak or roast)
2 large onions, chopped
3 TBS olive oil
Salt & black pepper to taste
1/2 tsp. cumin
1 can (6 oz.) tomato paste
2 C beef broth
2 cloves garlic, chopped
1 tsp. fresh coriander, chopped
Hot-cooked white rice (for serving; optional)
In a large skillet, sauté cubed beef and onions in olive oil until browned. Add beans, salt, pepper and cumin. In a bowl, combine tomato paste and beef broth. Add to skillet; mix well. Bring to a boil; simmer for about one hour, stirring occasionally. Add garlic and coriander; simmer for an additional five minutes.
Suggestion: Serve over hot-cooked white rice.
