2 large Idaho baking potatoes
1 C cheddar cheese, grated & divided
1/4 C milk
2 TBS butter
1/2 tsp. salt
4 cherry tomatoes, halved
8 black olives, sliced
1 small green bell pepper, cleaned with pith removed, and cut into strips
4 blue corn chips
Scrub and pierce potatoes; bake at 375-degrees for about one hour, or until tender. If desired, cook potatoes in microwave after piercing until tender, about five to ten minutes. Allow potatoes to cool before handling. Cut potatoes in half lengthwise; scoop out potatoes, leaving a thin shell. In a bowl, mash potatoes. Add 1/2 cup shredded cheddar cheese, milk, butter and salt. Spoon mixture into potato shells. Sprinkle tops with remaining cheese. Place stuffed potatoes on a cookie sheet; bake at 375-degrees F for about five to ten minutes, or until cheese is melted. Create a face on top of each potato using the halved cherry tomatoes, sliced black olives and green pepper strips. Place the blue corn chips so they appear as "hats." Recipe makes four servings.
