Thanksgiving Egg Bake
3 C prepared or leftover stuffing
12 eggs
1 C leftover turkey, shredded
1/2 C carrots, diced
1/2 C green onions, sliced
1 C cheddar cheese, shredded
Salt & black pepper to taste
Preheat oven to 350-degrees F. In a large bowl, whisk eggs. Add the shredded turkey, diced carrots, sliced green onions, shredded cheddar cheese and salt and black pepper to taste. Mix well. Scoop prepared stuffing into a greased square baking pan; push it down with a spoon to make an even layer for crust. Pour egg mixture evenly into the pan, over the pressed stuffing. Bake for about forty-five minutes. Serve. Note: Recipe makes enough for nine servings.
