Eritrean herbed butter
7/8 C (14 TBS) unsalted butter
1/2 C water
2 small onions, finely chopped
2 garlic cloves, crushed
2 tsp. fresh ginger, shredded
1/2 tsp. Berbere spice
Add butter and water to a skillet; heat until butter has melted. Add remaining ingredients; simmer on low for about thirty minutes, or until butter is clear. Do not stir. Pass mixture through a sieve. Allow to cool; store in a tight-lidded jar.
Uses: Tegelese Tesmi is an ingredient in Tsebhi Dorho (Eritrean Spicy Chicken). It can also be used as added flavoring to warmed flatbreads.
