1-1/2 C leftover cooked mashed potatoes
1 egg, beaten
2 TBS flour
1/4 C breadcrumbs
2 TBS parmesan cheese
1 C vegetable oil
Salt to taste
In a bowl, combine leftover cooked mashed potatoes with beaten egg and flour until completely mixed. In another bowl, mix together breadcrumbs and parmesan cheese. Scoop potato mixture by rounded tablespoon, and then coat with breadcrumb mixture. Shape into rounded rectangles and place on a cookie sheet. Refrigerate for about ten minutes. Heat oil in an electric frying pan to 350-degrees F. Drop four to six tater tots in hot oil; do not overcrowd the pan. Cook for one to two minutes, or until golden brown in color. Drain on paper towels; sprinkle with salt. Recipe makes about twenty-four tater tots.
