Sudanese Meat Sauce
3 onions, chopped
1 C vegetable oil
1 bulb garlic, crushed
1 LB beef, minced
2 C water
2 TBS Wayka (okra powder)*
1/2 C tomato paste
1 tsp. black pepper
Heat vegetable oil in a large skillet or wok. Add chopped onions and fry until crispy in texture. Remove onions from oil with a slotted spoon; drain on paper towels. Add minced beef to heated oil; brown. Add water. Bring mixture to a boil. Reduce heat and simmer for about thirty minutes. Add tomato paste; cook an additional five minutes. Using a mortar and pestle, crush garlic with black pepper; add to meat mixture with cooked onions. Add Wayka (okra powder); stir to combine and cook for two minutes.
Suggestions: Serve over Aseeda (Sudanese wheat porridge) or rice.
*Note: Wayka (okra powder) can be found at Middle Eastern specialty stores, or can be ordered online from Alibaba, Amazon and NutriCargo among others.
