4 leftover sweet potatoes, fully cooked & peeled
Nutmeg to taste
3 eggs
Butter to taste
Nonstick cooking spray
Bake sweet potatoes at 350-degrees F for forty-five minutes, or microwave at high setting for eight minutes until fork tender. Peel sweet potatoes while hot; chop roughly. Place chopped sweet potatoes in a food processor; sprinkle with nutmeg to taste. Add the eggs and butter to taste (about 1/4 cube); process until smooth. Place mixture in a glass baking dish coated with nonstick cooking spray; bake at 350-degrees F for thirty minutes. Serve.
