Sweet Potato Chocolate Muffins
2 C leftover cooked mashed sweet potatoes
1 box (15.25 oz.) chocolate cake mix
Milk (as needed)
In a large bowl, mix together leftover cooked mashed sweet potatoes and chocolate cake mix. Stir until a thick batter forms. Add milk if batter is not moist enough. Line a muffin pan with paper muffin cups; spoon batter into each cup (about 2/3 full). Bake at 350-degrees F for eighteen to twenty minutes, or until a toothpick inserted into muffins comes out dry and clean. Recipe makes about twelve muffins.
