4 beef strip steaks, cut 1/2-inch thick
Salt & black pepper to taste
1 tsp. dry mustard, divided
1/4 C margarine
3 TBS lemon juice
2 tsp. fresh chives, minced
1 tsp. Worcestershire sauce
Pound steaks to about 1/4-inch thick. Season both sides with salt, black pepper and 1/8 teaspoon mustard, rubbing spices into the meat. Melt margarine in a large skillet over medium-high heat; cook steaks for two minutes on each side (or to desired doneness). Transfer steaks to a serving platter. Add lemon juice, chives, Worcestershire sauce and remaining mustard to the skillet; bring to a boil. Return steaks to the skillet to heat through.
Suggestion: Serve with a side of sliced mushrooms sautéed in butter.
